Ingredients

20 baby sweet peppers
cooking spray
1 teaspoon ground chipotle chile pepper
1 teaspoon paprika
1/2 teaspoon kosher salt
1 flank steak , trimmed
3 tablespoons canola mayonnaise ( such as Hellmann 's )
1 teaspoon lime rind , grated
1 tablespoon lime juice
1 teaspoon garlic , minced
1 teaspoon water
8 corn tortillas
1/2 cup refrigerated fresh salsa
2 ounces queso fresco , crumbled ( about 1/2 Cup )

Instructions

1.Preheat oven to 400°F (200°C).
2.Cut baby sweet peppers in half and remove seeds. Spray peppers with cooking spray and sprinkle with chipotle pepper, paprika and kosher salt. Toss to coat evenly and place in a single layer on a baking sheet. Roast for 20 minutes or until tender.
3.Rub the flank steak with chipotle pepper, paprika and kosher salt.
4.In a small bowl, mix mayo, lime rind, lime juice, garlic and water to make lime mayo.
5.Heat a large cast-iron skillet over medium-high heat. Coat the skillet with cooking spray. Add the steak to the skillet, and cook for 4-5 minutes per side or until desired degree of doneness. Remove steak from skillet and let it rest for 5 minutes.
6.Heat the tortillas according to package instructions.
7.Thinly slice the steak.
8.Assemble the tacos by spreading lime mayo on each tortilla, topping with roasted peppers, sliced steak, salsa, and crumbled queso fresco.
9.Serve immediately and enjoy!
