Ingredients

1 cup heavy cream
1 teaspoon beef bouillon
1/2 tablespoon lemon juice
1 tablespoon marsala wine or 1 tablespoon madeira wine
1/4 teaspoon salt ( or to taste )
1/4 cup cognac
1 tablespoon olive oil
2 tablespoons butter
4 sirloin steaks , each 1-inch thick ( room temperature )
2 tablespoons peppercorns , crushed ( To crush , place the peppercorns in a plastic bag and flatten them with flat side of meat mallet )
garlic salt , to taste
1/2 loaf French bread , cut into 1-inch thick rounds & toasted on both sides
Steak Au Poivre is a classic French dish that translates to 'pepper steak'. It is made by coating sirloin steaks in coarsely crushed peppercorns and then searing them in a hot skillet. Instructions

1.In a small bowl, whisk together the heavy cream, beef bouillon, lemon juice, marsala wine, and salt until well combined. Set aside.
2.Heat a large skillet over medium-high heat. Add the olive oil and butter, and swirl to coat.
3.Season the sirloin steaks generously with garlic salt, and then press the crushed peppercorns firmly into both sides of each steak.
4.Add the steaks to the hot skillet, and cook for 4-5 minutes per side for medium-rare. Transfer the steaks to a plate and cover with foil to keep warm.
5.Pour the cognac into the skillet and cook until reduced by half, scraping any browned bits from the bottom of the pan. Slowly add the cream mixture to the skillet, stirring constantly until thickened. Remove from heat.
6.Serve the steaks on a bed of toasted French bread rounds, topped with the cognac cream sauce.
