Ingredients

3 New York strip steaks , about 2-inches thick ( or 3 Kansas City steaks ) or ( 18 ounce ) shell steaks ( or 3 Kansas City steaks )
vegetable oil cooking spray
seasoning salt , to taste
1 tablespoon unsalted butter
1 1/2 tablespoons chopped shallots
2 tablespoons cracked mixed peppercorns ( red , green , white and black peppercorns , See note above )
1/2 cup cognac
3 tablespoons undiluted store-bought veal demi-glace ( See note above )
3/4 cup heavy cream

Instructions

1.Preheat the oven to 400 degrees F.
