Ingredients

4 beef loin steaks , cut 1-inch thick
1 tablespoon kosher salt
2 tablespoons whole black peppercorns
1 tablespoon vegetable oil
1/3 cup shallot , finely chopped
1/4 cup butter , cut into 4 pieces
1/2 cup cognac or 1/2 cup other brandy
3/4 cup heavy cream

Instructions

1.Preheat oven to 200 degrees Fahrenheit (95 degrees Celsius).
2.Sprinkle salt over the beef loin steaks.
3.Crush Peppercorns roughly using mortar and pestle.
4.Press Coarsely crushed peppercorns into both sides of each steak.
5.Heat oil in large pan over high heat.
6.Add steaks to the pan, and cook for about 4 minutes on each side, or until nicely seared and brown.
7.Remove the pan from heat and put it in the oven.
8.Cook the steak in the oven for 10-12 minutes for Medium Rare.
9.Transfer the steak onto the Plate. Keep it warm.
10.Reduce the heat of pan and add shallots.
11.Stir butter into the pan, let it melt.
12.Pour cognac and let the alcohol burn.
13.Add heavy cream and let it simmer for 2-3 minutes.
14.Pour the sauce over the steak and serve it hot.
