Ingredients

32 -34 ounces chopped tomatoes
1 lb freshly ground steak or 1 lb ground sirloin
1 1/2 cups chopped onions
8 ounces sliced mushrooms
3 -4 garlic cloves , crushed , to taste
salt and pepper , to taste
1/2 teaspoon dried oregano
1/2 teaspoon brown sugar
1/4 teaspoon balsamic vinegar , to taste
2 tablespoons unsalted butter
1/3 cup flour
salt and white pepper , to taste
1 pinch nutmeg
1 pinch cayenne ( optional ) or 1 dash Tabasco sauce , to taste ( optional )
2 cups milk
1 cup grated cheddar cheese
3 tablespoons grated parmesan cheese
9 slices of uncooked lasagna noodles ( we use Mission brand lower carb pasta )
8 ounces fresh Baby Spinach ( thawed and drained ) or 8 ounces frozen spinach ( thawed and drained )
1/4 cup chopped fresh basil
1 cup grated cheddar cheese
3 tablespoons grated parmesan cheese

Instructions

1.Preheat the oven to 375°F.
2.In a large skillet, cook the ground beef over medium heat until browned. Drain any excess grease.
3.Add the onions, mushrooms, garlic, salt, pepper, oregano, brown sugar, and balsamic vinegar to the skillet. Cook for about 10 minutes until the vegetables are tender.
4.In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute. Gradually whisk in the milk, stirring constantly until the mixture thickens.
5.Add the cheddar cheese, parmesan cheese, salt, white pepper, nutmeg, and cayenne/Tabasco sauce (if using) to the saucepan and stir until well combined.
6.In a 9x13 inch baking dish, layer the lasagna noodles, beef mixture, spinach, and cheese sauce. Repeat until all ingredients have been used, making sure to end with a layer of cheese sauce.
7.Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and continue baking for an additional 25 minutes until the cheese is melted and bubbly. Let the lasagna cool for a few minutes before serving.
