Ingredients

2 lambs kidneys or 2 a piece ox kidney
1 kg topside steak
2 onions
3 cups beef stock or 3 cups water
375 g puff pastry
1/3 cup flour
egg yolk , for glazing
1/2 cup water , extra

Instructions

1.Preheat oven to 180ºC (350ºF).
2.In a large pan, heat some oil and brown the steak in batches. Remove from pan and set aside.
3.Add the chopped onions to the pan and cook until they are soft and browned.
4.Add the kidneys and cook for a minute or two.
5.Return the steak to the pan along with the beef stock or water. Add salt and pepper to taste.
6.Cover and simmer for two hours over low heat, stirring occasionally.
7.Remove from heat and let it cool for a while.
8.Spoon the meat mixture into a large ovenproof dish or pie dish.
9.Dust your working surface with flour and roll out the puff pastry to fit the top of the pie.
10.Brush the edges of the dish with egg yolk and lay the pastry over the top of the pie.
11.Cut a small steam hole in the middle.
12.Brush the top of the pastry with egg yolk and bake for 40 to 50 minutes until golden-brown.
