3 cups water
1/2 cup red wine
1 onion , finely chopped
1 stalk celery , chopped
2 carrots , peeled and sliced
2 russet potatoes , peeled and cubed
1 teaspoon minced garlic
2 cups cabbage , chopped
1 can corn , drained
1 can cut green beans , drained
1 can diced tomatoes with juice
1 package frozen mixed vegetables
2 beef bouillon cubes
2 teaspoons dried basil
1 teaspoon dried oregano
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 bay leaf

Instructions

1.Heat the vegetable oil in a large pot over medium-high heat.
2.Add the beef stew meat to the pot and brown on all sides.
3.Add in the beef broth, V8 juice, water, red wine, onion, celery, carrots, potatoes, garlic, cabbage, corn, green beans, diced tomatoes, beef bouillon cubes, basil, oregano, salt, pepper, and bay leaf.
4.Bring the soup to a boil, then reduce heat and let simmer for 1 hour.
5.Add in the frozen mixed vegetables and continue to simmer for an additional 30 minutes.
