Instructions

1.In a large bowl, combine the coleslaw mix, scallions, cooked shrimp or chicken, cilantro, ginger, green hot pepper sauce, and hoisin sauce. Mix well.
2.Lay out an egg roll wrapper in a diamond shape. Spoon approximately 2 tablespoons of the filling onto the center of the wrapper.
3.Roll the wrapper up tightly, folding in the sides as you go. Dab the edges with water to seal them.
4.Repeat with remaining wrappers and filling.
5.Heat the canola oil in a large skillet over medium-high heat. Fry the egg rolls in the hot oil until golden brown and crispy, turning occasionally.
6.Drain on paper towels and serve hot with Chinese duck sauce.
