St. Patrick's Green Velvet Cake is a festive dessert that is perfect for St. Patrick's Day celebrations. The cake gets its green color from food coloring and its moist texture from buttermilk. While the origins of red velvet cake are unclear, some sources suggest that the cake was originally made with cocoa powder, vinegar, and buttermilk to create a chemical reaction that would cause the cake to turn red. This version of the cake swaps in green food coloring instead of vinegar to create a fun and festive dessert that is perfect for any St. Patrick's Day celebration.

Instructions

1.Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

3.In another bowl, mix together the eggs, oil, buttermilk, green food coloring, vinegar, and vanilla.
4.Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
5.Pour the batter evenly into the prepared pans and bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
6.Cool the cakes in the pans for 10 minutes, then remove from the pans and place onto a wire rack to cool completely.
7.Once the cakes are cooled, spread a layer of cream cheese frosting on top of one cake, then place the other cake on top and spread frosting over the entire cake.
