4 boneless skinless chicken breast halves
1/4 cup sriracha chili-garlic sauce , divided
1 garlic clove , minced
1/4 cup water , divided
1 tablespoon olive oil
1 medium sweet onion , sliced
1 sweet pepper , seeded and sliced into thin strips ( yellow , green or red )
2 Hass avocadoes
2 2 tablespoons lemon juice or 2 tablespoons cider vinegar
4 large flour tortillas

Instructions

1.Preheat oven to 350°F (175°C).

3.While chicken is cooking, heat olive oil in a cast-iron skillet over high heat. Add sliced onions and peppers. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender.
4.While vegetables are cooking, prepare avocado salsa. Remove the skin and pit from the avocados and mash in a bowl with lemon juice or cider vinegar until desired consistency is reached. Set aside.
5.Once chicken is cooked, remove from oven and let cool for 5 minutes before slicing into thin strips.
6.Add sliced chicken to skillet with cooked vegetables along with remaining 2 tablespoons of sriracha sauce and 2 tablespoons of water. Cook for an additional 2-3 minutes, stirring occasionally, until chicken is heated through.
7.Warm tortillas in a microwave for 30 seconds to 1 minute before assembling fajitas.
8.Assemble fajitas with chicken and vegetable mixture, avocado salsa, and cheddar cheese (optional). Enjoy!
