Ingredients

2 lbs squid
250 g spinach
5 tablespoons olive oil
1 finely chopped onion ( small )
1/2 cup finely chopped herbs ( mix of spearmint , parsley and basil )
1/2 cup rice
salt and pepper

Instructions

1.Clean the squid by removing the head and the guts. Rinse under cold water and drain.
2.In a bowl, combine chopped onion, herbs, spinach, rice, salt, and pepper. Mix well.
3.Stuff each squid with the mixture using a small spoon. Don’t overstuff the squid to avoid bursting during cooking.
4.Close the squid openings with a toothpick to secure the stuffing.
5.Heat olive oil in a pan and sauté onion and garlic.
6.Add grated tomatoes, wine, and water and bring to a boil. Reduce heat.
7.Arrange the stuffed squids in the pan and cook over medium-low heat for 1 hour or until tender.
8.Sprinkle chopped parsley over the top before serving.
