3 3/4 cups vegetable stock
1 teaspoon chopped sage
2/3 cup apple juice

4 tablespoons heavy cream
2 teaspoons horseradish sauce
1/8 teaspoon curry powder
1 tablespoon lime rind , shredded ( optional )

Instructions

1.Preheat pumpkins until softened.
2.Add 1 tablespoon butter to the pot and let it melt, then stir in onion and curry powder and cook until soft.

4.Add apple juice to the mixture and blend until pureed until it reaches your desired consistency.
5.Add salt, pepper and heavy cream to the soup and mix gently.
6.In another bowl, mix horseradish sauce, heavy cream, and curry powder together until mixed. Add some shredded lime rind if you wish before storing in the refrigerator.
