2 cups bulgar cracked wheat , fine
1 tablespoon salt
1 small onion , grated
1 tablespoon coriander seeds or 1/2 bunch fresh coriander
3 cups mashed cooked squash or 3 cups pumpkin
1/3 cup flour
2/3 cup olive oil
2 large onions , julienned

Instructions

1.Preheat oven to 350°F (175°C).
2.Combine bulgar wheat, salt, grated onion, and coriander in a bowl.
3.In another bowl, mix the mashed squash or pumpkin, flour, and 1/3 cup of olive oil.
4.Brush a large baking dish with some olive oil.
5.Spread half of the bulgar mixture over the bottom of the dish.
6.Place the squash or pumpkin mixture on top of the bulgar mixture.
7.Spread the rest of the bulgar mixture on top of the squash or pumpkin mixture.
8.Top with julienned onions.
9.Drizzle the remaining olive oil over the top of the dish.
10.Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
11.Take off the foil and bake for another 15 minutes, or until the top is golden brown.
12.Serve hot and enjoy!
