450 g butternut squash
2 tablespoons olive oil

2 tablespoons cream ( any type )
225 g small cooked beetroots
100 g goat 's cheese

Instructions

1.Preheat the oven to 180°C
2.Peel and dice the butternut squash. Place it in a baking dish and toss with olive oil. Roast for 20-25 minutes until tender.
3.In a bowl, whisk together eggs and cream until well combined. Season with salt and pepper.
4.Cut the beetroot into small pieces.
5.Add the roasted butternut squash to the beaten eggs, and stir.
6.Heat a skillet and add the mixture to it. Let it cook for 5-7 minutes, stirring occasionally until the bottom is set.
7.Crumble the goat's cheese over the top of the tortilla and place it in the preheated oven. Bake for 8-10 minutes until the top is set.
