3/4 teaspoon hon dashi ( Japanese bonito-type soup stock granules )

Instructions

1.Soak the mai fun noodles in hot water for 5 minutes and then drain.
2.In a large bowl, mix together the cooked shrimp, cabbage, carrot, green onion, bean sprouts, red bell pepper, fish sauce, and noodles.
3.Lay out the egg roll wraps and place a heap of the filling mixture in the center of each wrap.
4.Fold the wrap into a compact packet by first folding up the bottom and top edges, then rolling the wrap tightly from right to left.
5.Beat the egg in a small bowl and brush it onto the edge of the wraps to help seal them.
6.Heat the vegetable oil in a deep fryer or wok until it reaches a temperature of 375 degrees F. Place the spring rolls into the hot oil and fry until golden brown, about 3-5 minutes.
7.For the dipping sauce, mix together the soy sauce, mirin, rice vinegar, green onions, ginger, and hon dashi, then serve alongside the spring rolls.
