Ingredients

3 1/2 cups water , divided
1 cup dried yellow split peas
1 bay leaf
2 cups chopped cauliflower florets
1 1/2 teaspoons salt
1 tablespoon butter
1 teaspoon vegetable oil
1 cup chopped onion
1 1/2 teaspoons minced peeled fresh ginger
2 garlic cloves , minced
1 tablespoon cumin seed
1 tablespoon brown mustard seeds
1 1/2 teaspoons ground coriander
1 teaspoon ground turmeric
1/2 teaspoon ground red pepper
1/8 teaspoon ground cloves
4 cups torn spinach
This recipe is a vegetarian Indian dish, a popular dish in North India. The creamy split peas pair with the spicy blend of onion and spinach and the mix of ginger, garlic, and spices. Instructions

1.Rinse the split peas well and soak them in a bowl of water for at least four hours or overnight.
2.Drain and rinse the split peas and place them in a medium-sized pot with 3 cups of fresh water and a bay leaf. Bring to a boil, then reduce the heat to medium-low and let simmer for 30 minutes.
3.Add cauliflower florets and salt to the pot and continue to simmer for another 15-20 minutes until tender.
4.In another pan, heat the butter and oil over medium heat and add onion. Cook for 5 minutes, stirring occasionally until the onion is softened.
5.Add ginger, garlic, cumin seeds, mustard seeds, coriander, turmeric, red pepper, and cloves to the pan. Cook for an additional 2-3 minutes, stirring occasionally.
6.Add the remaining 1/2 cup of water to the pan and bring to a boil. Reduce the heat and let simmer for 5 minutes.
7.Stir in the torn spinach and cook until wilted, for about 2 minutes.
8.Combine the cooked split peas and cauliflower with the spiced onion and spinach mixture. Serve hot with rice or naan bread.
