1 1/2 cups split peas , rinsed

2 teaspoons canola oil
4 slices tempeh bacon ( Smoky Tempeh Bacon )
1/4 cup vegan mayonnaise ( or use regular )
1/2 cup thick cashew cream ( Cashew Cream ( Regular and Thick ) or use storebought )
1/2 chipotle chile in adobo

Instructions

1.In a large pot, melt the margarine over medium heat.
2.Add shallots, leeks, carrot, garlic, rosemary, bay leaf, smoked paprika, and a pinch of salt. Mix well.
3.Cook for about 5 minutes or until the vegetables soften.
4.Add broth and split peas, cover with a lid, and bring the mixture to a boil.
5.Lower the heat, and simmer for about 45 minutes or until the peas are soft. Remove the bay leaf.
6.In a pan, heat the canola oil over medium heat.
7.Add tempeh bacon and cook for about 2 minutes per side or until crispy.
8.In a blender, blend mayonnaise, cashew cream, chipotle chile, and lime juice. Season with salt and black pepper.
9.Serve the soup topped with the chipotle cream and tempeh bacon slices.
