Ingredients

450 g frozen spinach
1 cup yellow rice or 1 cup brown rice , uncooked
24 ounces chicken breasts
1 shallot
2 garlic cloves
4 ounces chestnut mushrooms or 4 ounces button mushrooms
4 ounces coarse salami or 4 ounces chorizo sausage
5 tablespoons olive oil
salt & pepper , to taste
4 tomatoes
Spinach With Chicken and Rice is a traditional Dutch recipe that provides an excellent way to combine chicken, veggies, and rice. Instructions

8.Drizzle the olive oil over the top of the dish and season well with salt and pepper.
9.Place the tomatoes around the chicken.
10.Bake in the preheated oven for 35-40 minutes until the chicken is fully cooked.
11.Let it cool for a couple of minutes before serving.
