4 cups fresh spinach leaves , chopped
1 pinch salt
1 onion , finely chopped
1 pinch salt

2 tablespoons ground sumac
2 tablespoons pine nuts ( optional )
3 tablespoons fresh lemon juice
1/2 teaspoon ground black pepper
1 cup butter
1 package frozen phyllo dough , thawed
Spinach Triangles, also known as Fatayer Sabanegh, are a popular Middle Eastern pastry that is typically served as an appetizer or snack. Instructions

1.Preheat the oven to 350°F.
2.In a large skillet, cook the chopped spinach and a pinch of salt over medium heat until wilted. Remove the spinach from the skillet and let cool.
3.In the same skillet, cook the finely chopped onion and a pinch of salt in olive oil until translucent and lightly browned. Remove the onion from the skillet and transfer to a large mixing bowl.
4.To the mixing bowl, add the cooked spinach, ground sumac, pine nuts (if using), fresh lemon juice, and ground black pepper. Mix well to combine.
5.Melt the butter in a small saucepan over low heat.
6.Lay a sheet of phyllo dough on a flat surface and brush with melted butter. Repeat with additional sheets until you have used half of the dough.
7.Cut the buttered phyllo dough into 3-inch squares using a buttered knife or pizza cutter.
8.Place a small spoonful of the spinach mixture in the center of each square.
9.Fold the square in half to form a triangle and press the edges to seal in the filling.
10.Transfer the triangles to a baking sheet lined with parchment paper.
11.Bake for 18-20 minutes, or until golden brown and crispy. Serve warm.
