1/2 cup sun-dried tomato ( not packed in oil )
2 teaspoons olive oil
2 lbs plum tomatoes , cored and quartered
4 garlic cloves , smashed
1 cup finely chopped fresh basil
1/2 cup chicken broth
salt & freshly ground black pepper
2 tablespoons freshly grated parmesan cheese
2 teaspoons freshly grated parmesan cheese
1 1/4 cups low-fat ricotta cheese
1/4 cup thawed frozen spinach , squeezed dry and chopped
1 large egg yolk
1 tablespoon olive oil
1 3/4 cups all-purpose flour
1 cup semolina
1 tablespoon salt
1/2 teaspoon fresh ground white pepper

Instructions

1.For the tomato sauce, in a food processor, process the sun-dried tomato until finely chopped. Heat the olive oil in a large skillet over medium heat. Add the sun-dried tomatoes, fresh tomatoes, garlic and 1/2 cup basil. Cook for 10 minutes, stirring occasionally. Add the broth and simmer for 10-12 minutes, until the tomatoes have broken down. Season with salt and pepper. Stir in the Parmesan cheese and set aside.
2.For the cavatelli, in a bowl, mix together the ricotta, spinach, yolk and olive oil. In a large bowl, whisk together the flours, salt and pepper. Stir in the ricotta mixture until a dough forms. Turn out onto a floured surface and knead for 2-3 minutes.
3.Cut into 6 pieces and roll each out into a 1/2-inch-thick rope. Cut into 1/2-inch pieces. Place on a flour-dusted tray and let rest for 20 minutes.
4.Bring a large pot of salted water to a boil. Add the cavatelli and cook for 2-3 minutes, until al dente. Drain and transfer to a large bowl. Add the tomato sauce and toss to coat. Garnish with the remaining basil.
