2 medium onions , chopped

2 cups sliced mushrooms
1 package fresh spinach , washed and chopped

4 ounces fat free cream cheese , softened
1/2 cup fat-free ricotta cheese
1/4 teaspoon salt
1/4 teaspoon pepper
12 lasagna noodles , cooked
Spinach-Mushroom Rotolo is a delicious and healthy vegetarian pasta dish that is perfect for any occasion. Instructions

1.Preheat oven to 350°F.
2.In a large skillet or saucepan, sauté onions and garlic in olive oil until tender.
3.Mix in tomatoes, white wine (or tomato juice), tomato paste, lemon juice, salt, and black pepper. Bring to a boil, reduce heat to low, and simmer for 30 minutes.
4.In a separate skillet, sauté mushrooms and spinach until tender. Add garlic and Italian seasoning, and cook for an additional 2 minutes.
5.In a medium bowl, mix together cream cheese, ricotta cheese, salt, and pepper.
6.Spread cheese mixture over cooked lasagna noodles, and top with mushroom and spinach mixture. Roll up each noodle and place in a greased baking dish.
7.Pour tomato sauce over the top of the noodles, making sure each one is fully covered.
8.Bake for 30-40 minutes, or until heated through and bubbly.
