1 teaspoon salt
1 teaspoon pepper
1/2 cup mushroom , sliced

1/4 cup parsley , minced

Instructions

1.Preheat oven to 325°F.
2.Cook rice in water, onion, and butter until water is absorbed.
3.In another pan, sauté sliced onion.
4.Add mushrooms and sauté until browned.
5.Add chopped spinach, thyme, 1/4 cup cheese, salt, and pepper.
6.Butter a 9- by 13-inch baking dish and place half of the rice on the bottom.
7.Layer mushroom mixture on top of rice.
8.Place remaining half of rice on top of mushrooms.
9.Sprinkle with remaining cheese and sliced mushrooms.
10.Bake for 30 minutes.
11.Garnish with minced parsley before serving.
