Ingredients

15 large pasta shells
2 cups frozen spinach , thawed
3/4 cup light ricotta cheese
3/4 cup crumbled gorgonzola ( or any blue cheese )
1/4 cup chopped walnuts
1 garlic clove , chopped
1 egg
2 tablespoons butter or 2 tablespoons margarine
1 garlic clove , minced
2 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon white pepper
2 cups half & half light cream ( or regular )
1/2 cup grated parmesan cheese

Instructions

1.Preheat oven to 375°F.
2.Cook pasta shells according to package directions, drain and cool.
3.Squeeze excess moisture from spinach and chop.
4.In a medium bowl, combine spinach, ricotta, gorgonzola, walnuts, garlic, and egg until well blended.
5.Stuff each pasta shell with approximately 2 tablespoons of filling. Arrange shells in a single layer in a greased 9x13 inch baking dish.
6.In a medium saucepan over medium heat, melt butter, add garlic and cook 1 minute stirring constantly, until fragrant.
7.Add flour, salt, and white pepper, whisking constantly for 1 minute.
8.Gradually whisk in half & half and parmesan cheese, and cook until the sauce is thickened and bubbly, approximately 10 to 12 minutes.
9.Pour sauce over shells.
10.Bake for 30 minutes or until the sauce is bubbling and golden brown.
