Ingredients

500 g frozen spinach , thawed and well drained
1 tablespoon olive oil
4 spring onions , finely sliced
50 g pine nuts
200 g feta , crumbled
2 eggs , lightly beaten
3 teaspoons dill
1/4 cup parmesan cheese
salt
pepper
8 sheets phyllo pastry
60 g butter , melted
Spinach & Feta Batons are a perfect appetizer for entertaining guests. They are easy to make and can be prepared in advance for convenience. The batons are a perfect combination of crispy phyllo pastry and rich, savory spinach and feta filling. They also contain a hint of dill and pine nuts which add depth and flavor. Instructions

1.Preheat oven to 190°C.
2.In a frying pan, heat olive oil over medium heat.
3.Add spring onions and pine nuts, and sauté for 2-3 minutes until fragrant and lightly browned.
4.In a large bowl, mix together the spinach, feta, eggs, dill, parmesan cheese, salt and pepper.
5.Add in the spring onion mixture and stir well to combine.
6.Lay 1 sheet phyllo pastry on a dry surface, brush with melted butter, then add another sheet on top. Repeat until you have 4 layers of phyllo pastry.
7.Cut the phyllo pastry stack in half lengthwise to make 2 long rectangles.
8.Place 2-3 tablespoons of filling at one end of each rectangle, leaving a small border, then tightly roll up the pastry lengthwise around the filling.
9.Brush each baton with melted butter, then transfer to a baking sheet lined with parchment paper.
10.Bake in the preheated oven for 25-30 minutes until golden brown and crispy.
