Ingredients

2 packages frozen chopped spinach , thawed
1 cup sliced mushrooms
1/3 cup onion , finely diced
1 can pinto beans or ( 15 ounce ) can black beans , rinsed and drained
3 teaspoons chili powder , divided
1/4 teaspoon red pepper flakes
1/2 teaspoon cumin
1 can low-sodium tomato sauce
2 tablespoons water
1/2 teaspoon hot pepper sauce
8 corn tortillas
3/4 cup reduced-fat monterey jack cheese
1/4 cup low-fat cheddar cheese
1 dash salt

Instructions

1.Preheat the oven to 375°F.
2.In a large skillet over medium-high heat, cook the mushrooms, onions, and 1 teaspoon of the chili powder until the vegetables are tender, about 7 minutes.
3.Add in the spinach, beans, cumin, and red pepper flakes. Stir until everything is well combined and cook for an additional 3-4 minutes.
4.In a separate bowl, mix the tomato sauce, water, hot pepper sauce and the remaining 2 teaspoons of chili powder.
5.Spread about 1/3 of the tomato sauce mixture in the bottom of a 9x13 inch baking dish. Place 1/3 cup of the spinach filling in the center of each tortilla and roll up. Place seam side down in the dish.
6.Pour the remaining tomato sauce mixture over the enchiladas.
7.Bake for 20-25 minutes or until heated through.
8.Serve and enjoy!
