Ingredients

4 cups chicken broth
1/2 teaspoon saffron threads , crumbled
1 1/2 cups Arborio rice
sea salt and pepper to taste
1/4 cup extra-virgin olive oil
1 onion , minced
3 cloves garlic , minced
1 cup white wine
2 cups chopped fresh spinach
2 tablespoons butter
1 1/2 cups grated Parmesan cheese
8 ounces mozzarella cheese , cut into 1/2 inch cubes
2 cups all-purpose flour
2 eggs , lightly beaten
2 cups seasoned bread crumbs
vegetable oil for deep frying
Spinach Arancini is a delightful spin on the traditional Italian dish. It is filled with creamy risotto rice that is flavored with saffron, onion, garlic, and Parmesan cheese. Instructions

1.In a medium saucepan, bring chicken broth and saffron to a simmer.
2.Add Arborio rice and stir until coated in broth.
3.Season with salt and pepper and continue cooking, stirring occasionally.
4.In a separate pan, heat olive oil over medium heat and cook onion and garlic until soft.
5.Add in white wine and cook until the liquid is reduced by half.
6.Add chopped spinach and cook until wilted down.
7.Stir the spinach mixture into the rice and continue cooking until tender.
8.Remove from heat and stir in butter and Parmesan cheese until melted and well combined.
9.Allow the mixture to cool completely.
10.Once cooled, form the rice mixture into 2-inch balls and place a cube of mozzarella cheese in the center of each.
11.Roll the balls in flour, then dip in beaten eggs and coat in breadcrumbs.
12.Heat vegetable oil in a deep-fryer or heavy-bottomed pot to 375°F.
13.Fry the rice balls until golden brown, approximately 3-4 minutes.
14.Remove from oil and drain on paper towels before serving.
