1 cup baby portabella mushrooms , chopped
1 egg
8 lasagna noodles
2 cups marinara sauce
1 cup shredded mozzarella cheese
1/4 cup fresh basil , chopped

Instructions

1.Preheat the oven to 375°F.
2.In a saucepan, melt the butter over medium heat. Add flour and cook for 1-2 minutes, stirring consistently. Gradually add the milk, stirring continuously to prevent lumps. Season with salt, pepper, and nutmeg and cook until the sauce thickens, about 5-7 minutes.
3.In a mixing bowl, combine the ricotta cheese, spinach, 1/2 cup parmesan cheese, prosciutto, mushrooms, and egg. Season with salt and pepper.
4.Meanwhile, cook the lasagna noodles according to the package instruction, drain and rinse them.
5.On a flat surface, lay the lasagna noodles flat, spoon the ricotta mixture over each noodle then roll up each noodle and put it seam down into a baking dish.
6.Pour the marinara sauce over the rolls, cover with mozzarella and remaining parmesan cheese.
7.Bake uncovered for 25-30 minutes until the cheese is melted and the rolls are browned. Garnish with fresh basil.
