2 tablespoons olive oil
6 manicotti
1 jar roasted garlic tomato sauce

Instructions

1.Preheat oven to 375 degrees F.
2.Drain and press tofu in paper towels or a towel until most of the moisture is removed.
3.Crumble tofu into a bowl and mix with chopped spinach, chopped kalamata olive, garlic powder, sea salt, black pepper, fresh oregano, and olive oil.
4.Stuff the manicotti with the mixture.
5.Pour the roasted garlic tomato sauce into a baking dish.
6.Place the stuffed manicotti in the dish and cover with foil.
7.Bake for 30 minutes.
8.Remove foil and bake for another 10-15 minutes, until golden brown.
9.Let cool for a few minutes before serving.
