1 cup walnuts , coarsely chopped
2 tablespoons white sugar
1/3 can pickled beets
1/4 cup cider vinegar
1 teaspoon chicken bouillon granules
1/2 teaspoon garlic powder

1/2 pound baby spinach , rinsed and dried
4 ounces goat cheese , crumbled
This Spinach and Goat Cheese Salad with Beetroot Vinaigrette is a delicious and healthy lunch option. Instructions

1.Preheat oven to 350°F (175°C).
2.Toss the chopped walnuts with 2 tablespoons of white sugar until coated. Spread into a single layer on a baking sheet.
3.Bake in preheated oven until nuts are lightly browned, about 10 minutes. Remove from oven and set aside.
4.Puree pickled beets, cider vinegar, bouillon granules, garlic powder, 1 teaspoon white sugar, salt, and black pepper together in a blender or food processor until smooth.

6.Divide baby spinach between 4 salad plates. Sprinkle with crumbled goat cheese and candied walnuts. Drizzle with beetroot vinaigrette.
