Ingredients

4 -5 lbs boneless leg of lamb
1 package spinach leaves , coarsely chopped
1/2 cup chopped fresh mint leaves
1 teaspoon ground black pepper
1 teaspoon salt
2 cloves garlic , minced
1/2 cup feta cheese
1/2 cup chopped onion
1 cup soft breadcrumbs
1/2 cup half-and-half , milk or 1/2 cup cream
2 eggs

ground black pepper
2 cups red wine

Instructions

1.Preheat the oven to 375°F.
2.In a large skillet, heat the olive oil over medium heat.
3.Add the chopped onion and minced garlic, sauté for 4-5 minutes or until they turn translucent.
4.Add the chopped spinach and cook for another 5-6 minutes or until the spinach wilts.
5.Remove the skillet from heat, and add in the feta cheese, chopped mint, breadcrumbs, half-and-half, eggs, salt, and pepper.
6.Mix the stuffing ingredients thoroughly.
7.Arrange the lamb onto the work surface and open it up so that the meat lies flat.
8.Spread the stuffing evenly onto the surface of the lamb.
