Ingredients

500 g frozen spinach , thawed and drained
125 g feta cheese , crumbled
125 g ricotta cheese
1 egg
15 g butter
1 onion , finely chopped or grated
1 tablespoon of fresh mint , chopped
1 tablespoon fresh parsley , chopped
4 sheets puff pastry
1 dash milk
Comfort food never goes out of style and Spinach and Feta Puff Pie recipe is no exception. This recipe is made up of the goodness of spinach, feta cheese, and ricotta cheese. With a hint of mint and parsley, this recipe gives out a fresh aroma and flavor. The flaky and golden puff pastry on the crust is the perfect complement to the spinach and cheese filling that's packed with protein, fiber, and a tangy flavor. Instructions

1.Preheat your oven to 170C.
2.In a bowl mix together spinach, feta cheese, ricotta cheese, egg, one tablespoon of chopped parsley and, mint. Set aside this mixture.
3.Take a frying pan, add butter and onions to it. Cook it till the onions are translucent, stirring occasionally for 4-5 minutes.
4.Mix the onion with the spinach mixture.
5.Grease a 20 cm diameter baking dish. Line the dish with puff pastry.
6.Pour in the spinach filling. Spread it evenly. Cover with another layer of puff pastry. Press the edges with a fork.
7.Take a sharp knife and make small cuts at the top of the pastry located in the center of the pie.
8.Brush with milk.
9.Put it in the oven for 35 - 40 minutes or until golden brown.
10.Let it rest for 5-10 minutes and serve warm.
