Ingredients

2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
2 tablespoons oil
1/2 cup water ( can be made ahead )
3 cups cooked turkey , shredded
1/2 cup medium onion , chopped
1 tablespoon Madras curry powder
1/4 teaspoon cayenne pepper
1/2 cup chopped coriander
1 tablespoon chopped ginger
1 teaspoon chat masala ( available in Indian stores )
100 ml vegetable oil
salt ( can be made ahead of time )
1/2 cup white onion , chopped
1 cup red bell pepper , diced
1 cup green bell pepper , diced
1 bay leaf
4 peppercorns ( cracked under a knife roughly )
1/2 cinnamon stick
1/2 cup left over cranberry sauce , from before
2 tablespoons white vinegar
1/4 cup sugar
1/4 cup water
30 ml oil

Instructions

1.In a mixing bowl, whisk together flour, salt and baking powder. Add oil and mix until the mixture forms crumbs.
2.Gradually add water and mix until a dough is formed. Knead for 10 minutes.
3.Cover the dough with a damp cloth and let it rest for 30 minutes.
4.In a pan, heat 100 ml of oil and add onions. Cook until onions are light brown.
5.Add turkey, curry powder, cayenne pepper, chat masala, ginger, coriander and salt. Cook for 10 minutes.
6.Remove from heat and let mixture cool.
7.Roll out the dough and cut into circles.
8.Fill each circle with a tablespoon of turkey mixture and fold in half to form a triangle. Crimp edges with a fork.
9.Heat oil in a pan and lightly fry the samosas until golden brown.
