Ingredients

1 tbsp olive oil
1 onion, chopped
1 garlic clove, minced
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp chili flakes
1 cup red lentils, rinsed and drained
1 can (14oz) diced tomatoes
4 cups vegetable broth
Salt and pepper to taste
Fresh cilantro for garnish

Instructions

1.In a large pot, heat olive oil over medium heat and sauté onion and garlic until soft.
2.Add cumin, coriander, and chili flakes and cook for 1 more minute.
3.Add lentils, diced tomatoes, and vegetable broth to the pot. Bring to a boil then reduce heat and simmer for 20-30 minutes, stirring occasionally.
4.Season with salt and pepper to taste.
5.Top with fresh cilantro before serving.
