Ingredients

8 ounces firm tofu
1/2 eggplant
1/2 onion
4 garlic cloves
1 dash red peppers or 1 dash cayenne
16 ounces rice noodles
1/4 cup peanut sauce
1/4 cup peanuts
2 tablespoons extra virgin olive oil
1 cup cooked broccoli

Instructions

5.Cut tofu into cubes and add to the pan along with the red peppers/cayenne and the cooked broccoli
6.Toss it all together and add the peanut sauce
7.Cook rice noodles according to package instructions and drain
8.Serve noodles with the stir fry and sprinkle with peanuts.
