2 tablespoons soy sauce , divided

1 1/4 lbs boneless skinless chicken breast halves , cut crosswise into 1/3-inch-wide strips
3 tablespoons peanut oil , divided
4 green onions , white parts and green parts chopped separately
2 teaspoons chopped seeded serrano chilies
1 bunch greens , thick stems removed , spinach left whole , other greens cut into 1-inch strips ( such as spinach , mustard greens , kale , or broccoli rabe , about 1 pound )
1/4 cup chopped roasted salted peanuts

Instructions

1.In a bowl, whisk together 1 tablespoon soy sauce, 1 tablespoon sherry, 2 teaspoons sesame oil and 1 teaspoon brown sugar.
2.Add chicken strips and toss to coat.
3.In a large nonstick skillet or wok, heat 2 tablespoons peanut oil over high heat.
4.Add chicken mixture and stir-fry for 3-4 minutes until chicken is cooked through.
5.Remove chicken and set aside.
6.In the same pan, heat the remaining 1 tablespoon peanut oil.
7.Add the white parts of the green onions, along with the serrano chilies and stir-fry for 1-2 minutes.
8.Add the greens and cook for 2-3 minutes until wilted.
9.Stir in the remaining 1 tablespoon soy sauce, along with the remaining 1 tablespoon sherry and 1 teaspoon brown sugar.
10.Return the chicken to the skillet and toss to coat.
11.Sprinkle with peanuts and chopped green onions.
12.Serve hot with rice or noodles.
