2 large white mushrooms , diced
4 cups fresh spinach , chopped

1/2 teaspoon cumin
1/2 teaspoon garlic powder

2 cups red enchilada sauce
3 cups reduced-fat cheddar cheese
12 corn tortillas

Instructions

1.Preheat the oven to 375°F.
2.In a large pan, sauté onions until translucent.

5.Add in the cumin, garlic powder, salt, and crushed red pepper flakes to taste.
6.Pour half of the enchilada sauce into the bottom of a 9x13 inch baking dish.
7.In a separate pan, warm the tortillas until pliable.
8.Spoon a generous amount of the mushroom mixture into each tortilla and roll up.
9.Place each enchilada seam-side down into the baking dish.
10.Pour the remaining enchilada sauce over the top of the enchiladas.
11.Sprinkle cheese over the top of the enchiladas.
12.Cover with foil and bake for 20 minutes.
13.Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
