Ingredients

2 eggplants
1/4 cup tomato paste
2 tablespoons red wine vinegar
1 tablespoon balsamic vinegar
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon ground red pepper
2 tablespoons extra virgin olive oil
1 cup onion , chopped finely
2 garlic cloves , minced
4 anchovy fillets , canned chopped ( about 1/3 ounce )
2 tablespoons fresh flat-leaf parsley , finely chopped

Instructions

1.Preheat grill to medium-high heat.
2.Lightly coat eggplant with cooking spray. Pierce eggplant several times with a fork.
3.Place eggplant on grill rack coated with cooking spray; grill 20 minutes or until eggplant is charred and tender, turning occasionally.
4.Cut eggplant in half lengthwise; discard seeds.
5.Place eggplant pulp in a colander for 10 minutes.
6.In a small bowl, combine tomato paste, red wine vinegar, balsamic vinegar, paprika, salt, and ground red pepper; stir with a whisk.
7.Heat olive oil a pan over medium-high heat. Add onion; sauté 3 minutes or until onion is tender. Add garlic; sauté 30 seconds or until fragrant. Add anchovy fillets; cook 1 minute, stirring mixture constantly.
8.Stir in tomato paste mixture; cook 1 minute or until slightly thickened.
9.Add eggplant; cook 2 minutes or until thoroughly heated. Remove from heat; stir in parsley. Serve dip with pita chips or vegetables.
