Ingredients

1 large eggplant
1 red bell pepper
1 green bell pepper
1/2 cup tahini
1/3 cup lemon juice
4 cloves garlic , minced
2 teaspoons ground cumin
2 tablespoons extra-virgin olive oil , divided
4 whole-grain flatbreads
4 teaspoons basil pesto
4 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
1 pound shrimp
1 tablespoon Cajun seasoning , or more to taste
3 tomatoes , cut into 16 slices
Baba Ghanoush is a Mediterranean dish originating from Lebanon, typically made with eggplant and tahini. This recipe puts a spin on the classic dip by using it as a base for a pizza-like dish. By adding roasted bell peppers, shrimp, and tangy cheeses, this dish becomes a unique and flavorful meal! Instructions

1.Preheat the oven to 450°F.
2.Cut the eggplant into 1-inch rounds. Cut the bell peppers into thick strips.
3.In a small bowl, mix together the tahini, lemon juice, garlic, and cumin. Thin the mixture with 1/4 cup of water until it is pourable.
4.Brush each piece of eggplant and pepper with olive oil and place on a baking sheet.
5.Roast in the oven for 25 minutes, or until tender and browned.
6.While the vegetables are roasting, season the shrimp with Cajun seasoning.
7.In a large skillet, heat 1 tablespoon of olive oil over high heat. Add the shrimp and cook for 2-3 minutes on each side until pink and crispy.
8.To assemble the flatbread, spread 1 teaspoon of basil pesto onto each flatbread.
9.Top the flatbread with the roasted vegetables, shrimp, and slices of tomato.
10.Sprinkle the mozzarella and Parmesan cheese over the top of each flatbread.
11.Bake in the oven at 425°F for 10-15 minutes until the cheese is melted and bubbly. Serve hot.
