750 g filet of beef , in one piece
1 tablespoon coriander seed
1 tablespoon green peppercorn
1/4 teaspoon salt
1/4 teaspoon ground pepper
3 tablespoons balsamic vinegar
3 tablespoons sesame oil
3 tablespoons soy sauce
3 tablespoons lime juice
2 tablespoons parsley ( finely chopped )
10 g parmesan cheese ( shavings )
20 g parma ham

Instructions

1.In a mortar and pestle, crush the coriander seeds and green peppercorns until coarsely ground.
2.Season the beef with salt, ground pepper, and the crushed pepper and coriander mixture.
3.Heat a frying pan until hot and sear the meat over a high heat until browned on the outside but still pink in the middle
4.Remove the beef from the heat and allow to rest for 5 minutes.
5.In a small bowl, mix up the balsamic vinegar, sesame oil, soy sauce, and lime juice.
6.Slice the beef as thinly as possible and arrange on a serving platter.
7.Drizzle the dressing over the beef and add parsley, parmesan cheese shavings, and slices of parma ham over the top.
