14 ounces pork legs , cut into chunks
2 garlic cloves , sliced

7 ounces chorizo sausage , cut into small pieces
14 ounces risotto rice
1 tablespoon smoked paprika
14 ounces canned unpeeled cherry tomatoes
4 cups vegetable stock , hot
7 ounces Baby Spinach
7 ounces clams , cleaned

Instructions

1.In a large pan, heat 2 tbsp olive oil over medium-high heat. Add the pork and cook until browned on all sides.
2.Remove the pork from the pan and add the remaining 2 tbsp of olive oil. Add the garlic and onion, and cook until the onion is translucent.
3.Add the chorizo and cook for another 2-3 minutes until it starts to release its oils.
4.Add the smoked paprika and canned unpeeled cherry tomatoes. Cook for 1-2 minutes, until the tomatoes start to break down.
5.Add the risotto rice to the pan and stir until it is coated with the tomato mixture.
6.Add hot vegetable stock slowly, one ladle at a time, stirring constantly. Continue adding the stock and stirring until the risotto is cooked, but still has a little bite to it.
7.Add the baby spinach and clams. Cover the pan and continue cooking for another 5-7 minutes until the clams are fully opened.
8.Serve hot and enjoy!
