Ingredients

200 g whole meal bread
1 tablespoon paprika
1 kg salmon ( cooked , steamed or poached or whatever leftovers you have )
1 kg potato
1 kg sweet potato
100 g feta
2 medium onions ( chopped )
2 garlic cloves ( finely chopped )
1/2 lemon ( juice plus grated rind )
2 tablespoons olive oil
2 tablespoons unsalted butter
1 red chili pepper ( finely chopped )
1 bunch coriander ( chopped )
1 egg
salt & pepper
2 teaspoons dried crushed red pepper flakes ( to taste when forming the cakes ) ( optional )
These Spicy Salmon & Coriander Fish Cakes are a delicious way to use up leftover salmon and make a quick and easy meal. Instructions

1.Preheat oven to 200°C.
2.Remove crusts from bread, chop bread into pieces, and grind in a food processor or blender.
3.Add paprika and pulse to combine. Put in a large bowl.
4.Flake cooked salmon and add to the bowl.
5.Add boiled potatoes, sweet potatoes, and feta cheese to the same bowl. Mash everything together.
6.In a frying pan, heat the olive oil and butter over low to medium heat. Fry onion and garlic until soft but not brown.
7.Add chili pepper, coriander, and lemon juice. Mix well and allow to cool.
8.Add the cooled onion mixture to the large bowl. Mix well. Season with salt and pepper.
9.Add the beaten egg and mix to combine.
10.Make fish cakes by taking small portions of the salmon mixture (each about 2 tablespoons) and shaping them into cakes.
11.Place the red pepper flakes in a small dish or on a small plate. Dip each cake into the pepper flakes.
12.Grease an oven-proof dish and bake the fish cakes for 10-15 minutes or until golden brown on top.
