1 large onion , cut into 8 chunks
2 garlic cloves
675 g parsnips , diced
2 plum tomatoes , quartered
1 1/4 liters vegetable stock
1 tablespoon lemon juice

Instructions

1.Preheat the oven to 200°C/ 180°C fan/ gas mark 6.
2.In a small frying pan, heat the olive oil over medium heat and add the coriander seed, cumin seed, ground turmeric, and mustard seeds.
3.Cook the spices for 1-2 minutes, stirring frequently, until fragrant.
4.Place the onion, garlic, and diced parsnips in a roasting tin, then add the cooked spices and toss to coat well.
5.Roast in the oven for 25-30 minutes, or until the vegetables are tender and lightly browned.
6.Add the roasted vegetables and plum tomatoes to a large saucepan, then pour over the vegetable stock and add the lemon juice.
7.Bring the soup to a boil, then reduce the heat and simmer for 10 minutes.
8.Use a blender or stick blender to blend the soup until smooth and creamy. If you want a thinner soup, add more vegetable stock or water.
9.Reheat the soup if necessary, then serve hot, garnished with a sprinkle of cumin seeds.
