Ingredients

3 large red bell peppers ( I used jarred roasted red bell peppers )
5 tablespoons extra virgin olive oil
12 shallots , chopped
2 cans chopped tomatoes with juice
2 cloves garlic , minced
3/4 teaspoon dry crushed red pepper ( I doubled that )
1/2 cup chopped fresh cilantro
1 teaspoon grated lemon , rind of
2 lbs halibut or 2 lbs cod fish fillets , cut into 1 inch pieces ( I used cod )
1 cup clam juice ( I added this because I thought it was a little dry ) ( optional )

Instructions

1.Preheat oven to 350°F.
2.Roast the red bell peppers for about 20 minutes or until the skin is blistered and charred. Once roasted, remove peppers from oven and let it cool.
3.Peel the roasted bell peppers and cut into thin strips.
4.Heat the extra virgin olive oil in a large pot or dutch oven over medium heat.
5.Add the chopped shallots and sauté until slightly browned, about 5 minutes.
6.Mix in the canned chopped tomatoes with juice, minced garlic, and crushed red pepper, and bring to a boil.
7.Stir in the roasted red bell pepper strips, fresh cilantro, grated lemon zest, and fish pieces.
8.Reduce heat, cover and simmer, stirring occasionally, until the fish is cooked through and the stew is thickened, about 15-20 minutes.
9.Remove from heat and serve hot with toasted bread.
