1 pound potatoes , peeled
3 cups water
3 1/2 cups chickpea flour
2 1/2 teaspoons salt
1 teaspoon ground turmeric
2 tablespoons mustard oil
vegetable oil for deep frying

Instructions

1.Green Chile Paste:
2.Mix green chile peppers, garlic, ginger, salt, turmeric, and vegetable oil in a blender.
3.Purée until smooth and set aside.
4.Noodles:
5.Using a mandoline or vegetable peeler, slice potatoes into very thin strips.
6.Mix chickpea flour, salt, and turmeric in a medium bowl.
7.Add mustard oil and mix until combined.
8.Add water slowly to form a smooth batter.
9.Heat vegetable oil in a large deep pot to 375°F.
10.Dip potato strips in batter and place in the hot oil.
11.Fry for approximately 3-4 minutes until golden brown.
12.Remove from oil and place on paper towels to drain excess oil.
13.Drizzle Green Chile Paste over fried potato strips and serve immediately.
