4 ounces thinly sliced pancetta , chopped
2 lbs pork shoulder , cut into 1 1/4-inch cubes
1 lb hot Italian sausage , casings removed
2 cups chopped onions
3/4 cup chopped carrot
3/4 cup chopped celery
6 large fresh thyme sprigs
6 large garlic cloves , chopped
2 bay leaves
1/2 teaspoon dry crushed red pepper
2 cups dry red wine
1 can plum tomatoes with juice , tomatoes chopped , juice reserved
1 1/4 lbs ziti pasta
2 cups coarsely mozzarella cheese , about 8 ounces
1/2 cup freshly grated parmesan cheese

Instructions

1.Preheat oven to 375°F.
2.Heat oil in heavy large pot over medium-high heat. Add pancetta; sauté until crisp and golden, about 5 minutes.
3.Using slotted spoon, transfer pancetta to large bowl. Sprinkle pork with salt and pepper.
4.Working in batches, add pork to pot and sauté over medium-high heat until browned on all sides, about 8 minutes per batch.
5.Using slotted spoon, transfer pork to bowl with pancetta.
6.Add sausage to same pot. Sauté over medium-high heat until browned, breaking up with back of spoon, about 8 minutes.
7.Using slotted spoon, transfer sausage to bowl with pork.
8.Add onions, carrot, celery, thyme, garlic, bay leaves, and crushed red pepper to same pot; sauté until vegetables are soft and browned, about 17 minutes.
9.Add wine; bring to boil, scraping up browned bits.
10.Add tomatoes with juice; bring to boil, stirring occasionally.
11.Reduce heat to medium-low; simmer until pork is tender and sauce is thick, stirring occasionally, about 2 hours.
12.Remove bay leaves from pork mixture and discard.
13.Cook ziti in large pot of boiling salted water until just tender, stirring occasionally.
14.Drain pasta thoroughly; return to same pot.
15.Add pork mixture to pasta; toss to blend well.
16.Transfer mixture to 13x9x2-inch glass baking dish.
17.Sprinkle cheese over pasta.
18.Bake pasta uncovered until heated through and cheese melts, about 30 minutes.
19.Sprinkle with grated Parmesan cheese and serve hot.
