1 cup carrot juice
2 tablespoons tomato paste
3 tablespoons rice
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup fresh cilantro , chopped

Instructions

1.Heat the olive oil in a stockpot or dutch oven over medium heat. Add onion and garlic, sauté for 2-3 minutes, stirring frequently.
2.Add the carrots, cinnamon, ginger, turmeric, and paprika. Stir and cook for about 2 minutes.
3.Add carrot juice, tomato paste, rice, salt, and pepper. Stir and bring to a boil.
4.Once boiling, reduce the heat to low and let simmer for 20-25 minutes, or until the carrots are tender.
5.Use an immersion blender to puree the soup until smooth.
6.Add chopped cilantro. Serve hot and garnish with more cilantro if desired.
