Ingredients

2 cans Pillsbury refrigerated crusty french loaf
3 chicken breasts
1/2 cup onion , chopped fine
1 green pepper , chopped fine
1 can chili beans ( I used spicy , drain , do n't rinse )
1 can black beans ( drain and rinse )
10 ounces white corn ( I used frozen , but a can will work just fine , yellow corn will work ok too )
1 can red enchilada sauce , I used Old El Paso
1/2 cup sour cream
2/3 cup salsa ( I used hot for some spice , but medium will be just fine )
1 package old el paso taco seasoning mix
1 cup monterey jack pepper cheese
1/4 cup water
1 tablespoon dried parsley
1 tablespoon olive oil to saute chicken and vegetables

Instructions

1.Preheat your oven to 350 degrees.
2.Cut off each end of each loaf about 1/2 inch.
3.Slice four 1 inch pieces out of each loaf end.
4.Hollow out the bread with a small serrated knife, leaving about 1 inch of bread around the edges.
5.In a large skillet or dutch oven, heat the olive oil over medium-high heat and saute the chicken with onion and green pepper.
6.Add the taco seasoning mix, chili beans, black beans, corn, enchilada sauce, and water to the skillet.
7.Simmer the mixture for about 10 minutes.
8.While the chicken mixture is simmering, mix together the sour cream and salsa in a separate bowl.
9.Once the mixture is done simmering, fill each bread bowl with the chicken filling.
10.Top with shredded cheese and a spoonful of the sour cream and salsa mixture.
11.Place the bread bowls and ends on a baking sheet and bake for about 12-15 minutes or until cheese is melted and bread is crusty and golden brown. Serve hot and enjoy!
