Ingredients

1 tablespoon meltable light margarine
1 small onion , finely chopped
1 small bell pepper , finely chopped
1 small zucchini , finely chopped
3 cloves garlic , minced
1 can chipotle chiles in adobo
2 tablespoons flour
1 can tomatoes and green chilies , undrained
4 cups cooked pasta ( I like to use small shells )
2 cups shredded low-fat cheddar cheese
1 cup fat-free cottage cheese
1/4 cup parmesan cheese
1 beaten egg
1 cup nonfat milk
1/4 cup Italian style breadcrumbs
This spicy low-fat pasta dish is perfect for a quick and easy weeknight meal that still has plenty of flavor. The chipotle peppers add a smoky heat to the dish, and the combination of low-fat cheeses keeps it creamy and indulgent. Instructions

1.Preheat oven to 350°F.
2.In a large nonstick skillet, heat margarine over medium-high heat.
3.Add onion, bell pepper, zucchini, and garlic, and sauté until tender about 5 minutes.
4.Remove 2 chiles from can and remove seeds, mince the chiles.
5.Add flour to skillet and mix well. Continue to stir for 30 seconds.
6.Add tomatoes, chiles, and cooking liquid from the can, bring to a boil, and cook 3-4 minutes, until sauce thickens.
7.Add pasta, 1 cup of cheddar cheese, cottage cheese, Parmesan cheese, egg, and milk. Mix together well.
8.Spread mixture into a 9"x13" inch baking dish coated with cooking spray.
9.Sprinkle breadcrumbs and remaining cheddar cheese over top and bake for 30 minutes.
10.Let cool for 5 minutes before serving.
