Ingredients

1 cup red lentils
1 onion , chopped
2 1/2 cups water
2 teaspoons curry powder
3/4 teaspoon cayenne pepper
1 tablespoon vegetable oil
2 cloves crushed garlic
1 teaspoon cumin seeds
Spicy lentil dip is a healthy alternative to traditional dips like hummus or sour cream-based dips. It's made from red lentils which are cooked with onions, curry powder, and cayenne pepper. The mixture is blended until smooth and mixed with garlic and cumin for an added flavor punch. The dip can be served with toasted pita bread or fresh vegetables, making it a perfect snack or appetizer for any occasion.

Instructions

1.Rinse and drain the lentils, then place them in a large saucepan.
2.Add the chopped onion, curry powder, cayenne pepper, and water to the saucepan.
3.Bring the mixture to a boil and then reduce the heat to low and simmer for 25 minutes, or until the lentils are very tender.
4.While the lentils are cooking, heat the vegetable oil in a small pan over medium-high heat. When the oil is hot, add the crushed garlic and cumin seeds and cook for 1-2 minutes or until fragrant.
5.When the lentils are fully cooked, use an immersion blender or transfer the mixture to a food processor and blend until smooth.
6.Stir in the garlic and cumin mixture and mix well.
7.Taste and adjust seasoning with additional cayenne pepper or salt as needed. Serve with toasted pita bread or fresh vegetables.
