Ingredients

1/2 lb ground lamb or 1/2 lb beef
1 tablespoon olive oil
1 medium onion , minced
2 tablespoons fresh parsley , minced
2 tablespoons chopped of fresh mint or 2 teaspoons dried mint flakes
1/3 1/3 cup raisins or 1/3 cup craisins
2 tablespoons pine nuts ( optional )
1 tablespoon cider vinegar
1 1/2 tablespoons salt
1/4 teaspoon pepper
1/4 teaspoon dried rosemary , crumbled
1/8 teaspoon cinnamon
1 pinch nutmeg
1 1/2 cups cooked rice
8 ounces canned tomato sauce
3 medium acorn squash , halved lengthwise and seeded

Instructions

1.Preheat the oven to 350°F (175°C).
2.In a skillet, brown the lamb or beef in olive oil over medium heat until no longer pink. Add onion, parsley, mint, raisins or craisins, and pine nuts (optional) and cook for another 2 minutes.
3.Add cider vinegar, salt, pepper, rosemary, cinnamon, and nutmeg to the skillet. Mix to combine and let cook for another 5 minutes.
4.Add cooked rice and 4 ounces of tomato sauce, mix well, and continue cooking for another 5 minutes.
5.Place the acorn squash halves, cut side down, in a baking dish. Add 1/4 inch of water to the bottom of the dish, cover with foil, and bake for 30 minutes.
6.Remove from the oven and drain off the water. Turn the squash halves cut side up and fill with the lamb or beef mixture. Top with the remaining tomato sauce and bake, uncovered, for another 15 to 20 minutes, until the squash is tender and the filling is hot.
